We’ve been entertaining a lot this Fall, but with a hyper one-year old running underfoot, I rarely have the time or energy to prepare the elaborate, 25-ingredient recipes I used to. Instead, I tend to stick to simple, quick and delicious recipes, and while my meals are rarely fancy, they’re generally pretty tasty!
About three months ago, DH insisted we buy this Cuisinart Cast-Iron Lasagna Pan from zulily. I reminded him that we already had a Pyrex baking dish that did the job just fine, but he persisted, arguing for the awesomeness that is cast-iron cookware. And let me tell you, I’m so glad he made me buy that pan! I’ve now made two lasagnas and one baked ziti in the pan and all have turned out perfect and delicious.
For the Baked Ziti, make your favorite homemade tomato sauce (about 48 ounces worth). Meanwhile, sautee one package of mild Italian sausage (casings removed). Also, cook one pound dried ziti and drain when cooked to al dente. Toss the pasta, sauce, ½ pound cubed fresh mozzarella, ½ cup freshly grated parmesan cheese, ½ teaspoon freshly ground black pepper, one pinch of red pepper flakes, one egg, and one 15-ounce container of ricotta cheese. Top with ½ pound sliced fresh mozzarella and ¼ cup fresh parmesan. Bake at 400 degrees for about 30 minutes and let stand for 10 minutes after baking.
And the best part (aside from the delicious Baked Ziti) was the easy clean up! The pan is dishwasher safe, but it also cleans up in the sink in a jiffy! That’s my kind of simple, quick and delicious recipe and my kind of pan!
